Happy Sunday, and Happy September! Here’s something tasty, something true, and some musings on food in storytelling to ponder over your favorite Sunday Treat.
Something Tasty: A cheese pairing to try
Weinkase Lagrein

There are some cheeses that feel like a whole meal in itself. I would consider Weinkase Lagrein to be one of them.
Here are the stats: Pasteurized cow’s milk ~ Alto Adige region, Italy ~ 1-2 months old
I know, it sounds really German, but it is an Italian cheese. The region borders Switzerland and Austria so everything that is produced there has a very fun fusion of different alpine cultures.
The cheese is bathed in a mix of herbs, garlic, pepper, and Lagrein wine (wein-kase means wine-cheese). Because of this, the cheese is infused with all the flavors that has earned the nickname “salami cheese” by many fans.
Try it by itself, and if you really want a hat on a hat- try it with some salami.

D.A.N.C.E.
Here’s the truth.
Dance used to be a huge part of my life and career. I wrote about it a bit here.
Nowadays, I use dance in a different context (besides in my show you can come see in NYC on September 13th, lots of movement there). Now I use it as a tool in food writing/journaling.
To me, every meal is a DANCE:
Drinks- warm? cold? water? wine? beer? fresh squeezed orange juice?
Ambience/Atmosphere- all the sights, sounds, and smells
Nibbles- the food, the most important part? maybe? snacks? courses?
Company/Conversation- even if the company is your own, it’s worth noting
Expectation- what did you think it would be like vs. what it was
I have found using the D.A.N.C.E. model is the best way for me to quickly and easily keep my meals alive long after they’ve passed. It allows me to quickly jot down the important gems to fully remember the experience.
As I mentioned a few weeks ago, I am going to be in Europe November and December, and the format of this newsletter will change a bit! I’ll be using the D.A.N.C.E. format in an effort to document what I’m eating in France, Germany, Austria, and Hungary, and sharing it with you, while also staying present in my travels.
And the really exciting part is…
I’m working on creating a D.A.N.C.E. journal for you! It will be available soon, so you can document your own food memories along with me.
If you have specific things you’d want/need out of a journal like this- please let me know!! I would love to take any and all suggestions before these go to print.
