Traditional guided tastings do this too! I do them all the time…

AND I thought it would be really fun if it were a bit more freeform, with more opportunities to experiment.

My biggest problem with pairing classes is:

I get excited and eat the cheese too fast and don’t leave enough to play with all the other pairing items.

Instead of the traditional one piece of cheese with one pairing item, every person will have two pieces of cheese, three wine tastings, and the opportunity to combine to your hearts delight with TWELVE sweet and savory pairing items.

There will be name tags because social anxiety is real and you are not a bad person if you forget someone's name three seconds after they introduce themselves (I'm telling myself this).
